When Executive Chef Arnold Preciado first started at The Reagan Library, he dove deep into the Reagans’ culinary likes and dislikes.
“Mrs. Reagan ate very, very light,” Preciado says. “Her go-to was the Nancy Salad—a simple mix of chopped romaine, turkey bacon, and avocado, like a light Cobb. That’s what she’d snack on when visiting. As for the President, he loved heartier dishes—his famous minestrone soup, chili with cornbread, and of course, his meatloaf sandwich. And let’s not forget his beloved Jelly Bellies.”
For the culinary event program, Chef Preciado recreated these favorites, alongside his own famous 10-hour short rib.
“It’s always a hit,” Preciado says. “Especially around the holidays, it’s all anyone orders. The word has spread.”
